Hors d’oeuvres & dinner

We have chosen Nosh Creative Catering as our caterers for the evening. This is the menu:
Passed hors d’oevres:
Moroccan Chicken Skewers:
Harissa, dates, ginger and maple reduction

Caprese skewers:
Mozzarella, basil, fennel pollen, balsamic reduction, olive oil, and cherry tomatoes

Arancini:
Crispy risotto, fennel, roasted tomatoes, Italian cheeses, Arrabbiata sauce

Salad:
Honey Crisp Apple Salad
Locally grown honeycrisp apples, dried tart cherries, shaved fennel, celery, manchego, fresh locally-grown greens, sherry and maple vinaigrette

Entrees:
Braised beef short ribs (beef)
– Black Angus short ribs, lemongrass, white wine, truffle butter

Lake Erie Walleye (fish)
– Brown butter and smoked paprika, dressed with cherry tomatoe, leeks, and homemade concord grape vinegar

Vadouvan Roasted Cauliflower (veggie, served to table, upon RSVP only)
– French curry, cauliflower, basil, roasted red peppers, coconut and fried chickpeas

Sides:
Green beans and candied carrots

Boulanger Cheesy Potatoes: baked with stock, bacon (large enough to pick out if you aren’t religious), onions, and Gruyere

Creamy “shagbark seed and mill” polenta:
Shagbark cornmeal, Pecorino Romano, seared mushrooms, basil and fried leeks

Desserts

There will be some kind of cake for cutting, etc. We will post what it will be when we know. But it will not be the main dessert event.

Shi’s Cakes
We will be serving dessert shooters in a variety of cake+frosting or cheesecake+fruit compote combinations. More later.

Cookie Table
There will also be a cookie table! Cookies are the perfect food: so portable! so discreet! so sharable! so fun to make! so many wonderful varieties! Beth has added a cookie table to the wedding dessert options. 

This is a fun tradition from Pittsburgh and Youngstown (who knew??) where guests who like to bake bring a dozen or two or more cookies to a wedding. Everyone’s cookies go out on a large table display at dessert time. Takeout containers will be provided so that guests can take some of their favorites home for future snacking.

We invite you to bring a few dozen cookies to contribute; a family recipe or a store-bought cookie that’s special to you would be great, but anything is fine. (If you’re flying or have other constraints, we understand.)
***Please pack your cookies in a portable, sealable container (labeled with your name). Cookie drop off will be at the Carriage House at Stan Hywet, after the ceremony (details available soon).

Music

The day’s music will be brought to us by several people dear to us.

Rhea Feldman, Josh’s sister, will be singing several times during the ceremony.

Matthew Smith, Beth’s cousin, will be playing guitar as guests enter and exit the ceremony.

Trevor Hughes, a friend of both Josh and Beth’s, has agreed to DJ the evening. In order to make this a better party, we ask that you let us know your favorite songs to dance to now, so we can gather them.
